Chicken Parm with a twist

Gluten free bread crumbs and pasta. I’ve been seeing if gluten free helps some issues I got (not convinced), so finding gluten free bread crumbs that work was a pain in the ass. Many ruined chicken parms.

Looks yummy, but you seem to have accidentally dropped some green stuff on your plate.

If you think you might be a celiac, I recommend you see your doctor. If you’re not actually allergic to gluten, going gluten-free won’t change your health at all. Now, cutting down on carbs is probably a good thing for most of us. If that’s a secondary benefit of doing this, then do what works for you.

These a middle ground. I’m negative for celiac, but have a different autoimmune disease where scientific literature shows that there can be some cross reactivity with gluten. So, not sure.

Not Celiac’s, but some other autoimmune issues that may respond well. Got some specialist appointment in a few weeks.

My time in academia and my current job give me good access to PubMed, which is a godsend. Hashimotos thyroiditis is what it is. Supposedly the molecule my immine system binds to shares structural similarity with gluten. Enough that there’s some evidence of cross reactivity.

Living gluten free is a lot easier than it used to be when I was young, thankfully I’m a coeliac in remission for the last 25 years.

If you want or need any gluten free stuff sent over that isn’t date sensitive, let me know.

Thanks, I appreciate that! I’ve heard that it is easier now, and it seems to be the case. Dark beer and challah bread are the only two things I’ve found irreplaceable. I have tested negative for celiac, but have a different autoimmune disease that may sometimes cross reactivity. We’ll see how this goes.

Ye’, 30 years ago it was hellish. Trying to cut bread from a tin, it either crumbled as you cut it or melted in the toaster, if you had a slice of toast before going to school, that was a good day.

Here in the U.K. there is a very large range of gluten free products and in the last four-six months the range has exploded with now 90% of our shops own brand sausages being gluten free.

Ye’, you may not be coeliac but may have a gluten intolerance. Many people mix the two up thinking a gluten intolerance is the same as being allergic to wheat, barley, oats and Rye.

So I get a lot of customers that I’ve got to talk to and explain allergies and intolerances, differences from gluten intolerance and coeliac, lactose from dairy, etc...

It’s come to a point where anything medical procedural, dietary (but not diets) requirements, car parts, car advice, whiskey and food advice, etc... they make a beeline for me. I guess it’s nice to be wanted. Lol.

But as I say, if I can help in any way, just shout and I’ll do what I can or direct you to where you can find it.
